After harvesting, the leaves and branches are sorted out from the fruit to ensure the purity of the olives. The olives are then placed in barrels of water, where they remain for about two weeks. Afterward, the olives are removed from the water and left to dry in bags for about 3-4 days before they are ready for further processing in one of the local oil mills.
